Quinoa Enchilada Casserole

I did not come to Switzerland to try to live my life at home. I came for new experiences and to try to live as much in the culture as possible. Knowing that it is only for a year makes it easier to forego things from home, especially Mexican food, which in Southern California is referred to simply as Food. We have not tried the outrageously expensive Mexican restaurants here (there are a few, and we hear they aren’t terribly authentic), and except for H’s birthday dinner, we have not had anything remotely Mexican tasting.

When Lynn came over, she asked what we wanted, and I suggested some canned green chiles and enchilada sauce. Last week I finally got around to making a recipe I had found, and it turned out pretty well. I didn’t buy the expensive avocados I saw at the Coop (which didn’t look too great), but other than that, I had all the ingredients.
